Salsa Chicken - cooking recipe

Ingredients
    1 Tbsp. oil
    1 lb. chicken breasts
    1 onion, chopped
    1 green pepper, chopped
    10 oz. pkg. frozen sweet corn
    1 c. chicken broth
    1 c. salsa
    1 1/2 c. Minute rice
    1/2 c. shredded Cheddar
Preparation
    Cube chicken breasts.
    Saute the onion, green pepper and chicken in the oil.
    Cook until chicken is cooked.
    Add corn, chicken broth and salsa.
    Bring to a boil.
    Add the Minute rice. Stir; cover and remove from heat.
    Let stand 5 minutes.
    Fluff up, then sprinkle on the cheese.
    Cover for 2 more minutes until the cheese melts.
    Serves 4.
