Maurine Moon'S Mexican Rice - cooking recipe
Ingredients

1 c. rice
2 medium onions, chopped
chili powder to taste
1 can tomatoes
1/2 c. bacon or ham
1 bell pepper, chopped
1 can tomato paste
fresh parsley
Preparation

Cook rice about half done.
Chop 1/2 cup bacon or ham.
Add to heavy skillet and cook slowly.
Add 2 chopped onions and chopped bell pepper; simmer with bacon.
Do not scorch.
Add chili powder to taste.
Add tomatoes and tomato paste.
Add half cooked rice, chili powder and salt to taste.
Cook slowly, stirring to keep from sticking.
Garnish with parsley.
