Yellow Squash Relish - cooking recipe

Ingredients
    12 c. yellow squash, chopped
    4 c. chopped onion
    2 large green bell peppers, chopped
    2 (2 oz. each) jars pimientos
    6 Tbsp. salt
    5 c. sugar
    2 1/2 c. vinegar
    2 tsp. mustard seed
    1 Tbsp. turmeric
Preparation
    Wash, peel and chop squash.
    Add onion, peppers and pimientos. Sprinkle with salt.
    Cover and let stand overnight.
    Rinse (real good) and drain.
    Bring sugar, vinegar, mustard seed and turmeric to boil.
    Add squash mixture.
    Reduce heat and simmer until heated through.
    Pour into clean hot jars, 1/2-inch headroom.
    Seal.
