Lentil Salad - cooking recipe

Ingredients
    1 ( 16 oz.) pkg. lentils
    1 c. finely chopped onions (or more, if desired)
    3 Tbsp. prepared mustard
    juice of 1 or 1 1/2 lemons
    tarragon vinegar (to achieve desired acidity)
    sugar
    chives
    oil
Preparation
    Check lentils and remove any little stones.
    In a 4-quart saucepan, wash lentils several times in 2 quarts of cold water to skim off debris.
    Use same saucepan to soak lentils overnight in 2 quarts of cold water.
