Pineapple Delicious - cooking recipe

1/2 tsp. grated lime peel
1 1/2 Tbsp. lime juice
2 Tbsp. honey
2 Tbsp. cherry brandy
1 small ripe pineapple, leaves removed
4 slices pound cake or cookies
Preparation

Mix the grated lime peel, lime juice, honey and cherry brandy together in a large bowl.
Peel the pineapple, removing the skin and most of the black holes on the surface of the flesh.
Stand the pineapple upright and begin cutting it vertically into 1/4-inch slices, stopping when you get to the core, turning it 90\u00b0 and cutting again, until the pineapple has been rotated 360\u00b0 on the base and all the flesh has been removed.
Then, stack up the slices and cut them into 1 1/2-inch wide strips.
Add the pineapple strips to the bowl containing the other ingredients and mix well.
Allow the pineapple to macerate in the lime juice mixture for at least 1 hour.
Serve with slices of pound cake or cookies.
