Morning Glory Muffins - cooking recipe

Ingredients
    2 c. flour
    1 3/4 c. sugar
    2 tsp. baking soda
    2 tsp. cinnamon
    1/4 tsp. salt
    2 c. grated carrots
    1/2 c. each: raisins, chopped nuts, coconut (optional), crushed pineapple, drained
    3 eggs, slightly beaten
    1 c. canola oil or 1/2 oil and applesauce
    2 tsp. vanilla
Preparation
    Combine flour, sugar, soda, cinnamon and salt in large bowl. Combine carrots, raisins, nuts, coconut and pineapple in medium bowl.
    Add to dry ingredients.
    Combine eggs, oil and vanilla. Add to flour mixture.
    Stir only until flour disappears.
    Do not overmix.
    Fill 18 to 24 muffin tins.
    Bake at 350\u00b0 for 20 minutes.
