Lentil Soup - cooking recipe
Ingredients

1 c. lentils (split yellow lentils preferred)
1/4 c. chopped celery
1/4 c. chopped scallions
1/4 c. chopped carrots
1/4 c. chopped zucchini (optional)
3 to 4 c. water (more if necessary)
2 tsp. salt
1 Tbsp. olive oil
1 tsp. cumin (optional)
Preparation

Clean the lentils and rinse with cold water.
Combine the lentils and the water in a pot.
Bring to a boil.
Stir and lower the heat.
Do not cover and cook until soft for about 45 to 60 minutes.
Stir occasionally.
Crush in the blender, then place back in the pot and add the salt, oil and vegetables.
Cover and cook on low heat for 20 minutes.
Serve with your favorite bread.
