Fried Vegetables - cooking recipe

Ingredients
    eggplant, tomatoes, okra, cucumbers, squash, mushrooms, onion and/or cauliflower
    eggs
    pepper
    flour
    salt
    cornmeal
    nonfat cooking oil
Preparation
    According to amount of vegetables you are going to use: Beat eggs
    with
    salt
    and
    pepper.
    Wash and drain vegetables until dry.
    Dip
    vegetables into a beaten egg, salt and pepper mixture. Mix
    in
    Ziploc or grocery bag:
    3/4 cup cornmeal to 1/4 cup flour.
    Drop
    in
    egg-coated
    vegetables and coat the vegetables with
    cornmeal/flour
    mixture, then fry in cooking oil until golden brown.
