Do Ahead Brunch Eggs - cooking recipe

Ingredients
    2 Tbsp. butter *
    3 Tbsp. flour
    1/2 tsp. salt
    1/4 tsp. pepper
    1 (12 oz.) can evaporated milk *
    1/2 c. water
    1 1/2 c. shredded Cheddar cheese (6 oz.)
    2 Tbsp. butter
    1 c. sliced mushrooms
    1/4 c. finely chopped onion
    11 or 12 beaten eggs *
    1 c. fresh bread crumbs
Preparation
    *May substitute margarine for butter, evaporated skim milk for evaporated milk and 2 egg whites for each whole egg.
