Zucchini Casserole - cooking recipe

Ingredients
    6 c. sliced peeled zucchini
    1 c. cream of chicken soup
    1 carrot, grated
    1 (7 oz.) Stove Top stuffing mix
    1 medium onion, chopped
    1 c. sour cream
    1/2 c. melted margarine
Preparation
    Cook zucchini and onion in boiling water for five minutes; drain. Stir in sour cream, chicken soup and carrot. Add melted margarine. Put half the stuffing in the bottom of a casserole dish. Put zucchini mixture over stuffing and add the remaining stuffing on top. Bake at 350\u00b0 for 30-35 minutes, uncovered.
