Cheesy Irish Potatoes - cooking recipe

Ingredients
    8 to 10 cooked, cubed Irish potatoes
    1/2 lb. Velveeta cheese, cubed
    parsley to taste
    1 small jar pimento, diced and drained
    1 onion, diced
    1 bell pepper, diced
    1/4 lb. butter or oleo, melted
    3/4 c. milk
    salt and pepper to taste
Preparation
    Mix all ingredients together in a large greased casserole. Bake for 1 hour at 350\u00b0.
    Cook, covered, until the last 15 minutes. Stir occasionally. Serves 10 to 12 people.
