Zucchini And Corn Bake - cooking recipe
Ingredients

1 lb. zucchini, cut into 1/2-inch slices
1/4 c. onion, chopped
1 Tbsp. butter
2 c. cooked Shoe Peg corn
2 eggs, beaten
1 c. grated cheese
1/4 c. bread crumbs
2 Tbsp. Parmesan cheese
1 Tbsp. melted butter
1/2 tsp. salt
pepper if desired
Preparation

Cook zucchini in small amount of water until tender.
Drain and mash.
Saute onion in butter until tender.
Mix together onion, zucchini, corn, eggs, cheese, salt and pepper.
Pour into a greased baking dish.
