Microwave Corn Muffins - cooking recipe
Ingredients

1/2 c. flour
1/2 c. yellow corn meal
2 Tbsp. sugar
2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 egg, lightly beaten
1/2 c. milk or buttermilk
2 Tbsp. oil or melted butter
Preparation

In a 1 1/2-quart mixing bowl, combine flour, corn meal, sugar, baking powder, baking soda and salt.
Add egg, milk and oil and stir just until all ingredients are moistened.
Spoon batter into 8 (6 ounce) custard cups lined with cupcake papers.
