Microwave Potato Casserole(Club Member: Ben Steadman) - cooking recipe

Ingredients
    8 to 10 medium potatoes
    1 stick butter
    1 small can sliced mushrooms
    1 bell pepper, chopped
    1 onion, chopped
    salt and pepper to taste
Preparation
    Peel and slice or dice potatoes. In large bowl, mix potatoes, onion, bell pepper and mushrooms. Pour half of mixture in large casserole; dot with 1/2 of butter. Add rest of potato mixture; dot with remaining butter. Salt and pepper mixture; cover. Cook in microwave on High for 15 to 20 minutes. Stir; recover and cook for 15 to 20 more minutes. Serves 6 to 8.
