Squash Stuffed Chicken - cooking recipe
Ingredients

3 Tbsp. butter or margarine
1/2 small onion, chopped
1 Tbsp. chopped fresh parsley
1/2 tsp. dried basil
2 medium zucchini, shredded (about 2 1/2 c.)
3 slices white bread, torn into coarse crumbs
1 egg
3/4 c. shredded Swiss cheese
1/2 tsp. salt
1/8 tsp. pepper
4 chicken breast halves (with bones and skin)
Preparation

In a skillet, melt butter or margarine over medium heat. Saute onion, parsley and basil until the onion is tender.
Add zucchini and continue to cook for 2 minutes.
Remove from the heat; stir in bread crumbs, eggs, cheese, salt and pepper. Carefully loosen the skin on the chicken on one side to form a pocket.
Stuff with zucchini mixture.
Bake at 375\u00b0 for 50 to 60 minutes or until chicken is done.

4 servings.
