Yellow Squash Casserole - cooking recipe

Ingredients
    2 lb. yellow squash
    2 eggs
    1 onion, grated (optional)
    2 c. thick white sauce
    1/2 lb. sharp cheese, shredded
    salt and pepper to taste
Preparation
    Cook squash until tender. Drain and mash into fine pulp.
    Add beaten eggs, onion, grated cheese and white sauce.
    Cook in a double boiler 1 hour.
    Place in a 2-quart casserole together with bread crumbs and bake at 375\u00b0 until crumbs brown.
    (Can cook in double boiler the day ahead, then bake later.)
    Makes 8 to 10 servings.
