Buzzard'S Breath Chili - cooking recipe

Ingredients
    3 Tbsp. lard, butter or drippings
    2 large onions, coarsely chopped
    8 lb. beef or other meat, about 1/2 diced and the other 1/2 coarsely ground for body
    5 cloves garlic, chopped
    5 Tbsp. plus 1 tsp. ground mild red chili pepper
    5 Tbsp. plus 1 tsp. ground hot red chili pepper
    1 Tbsp. cumin
    1 tsp. dried oregano
    3 (8 oz.) cans tomato sauce
    3 (8 oz.) cans water
    2 Tbsp. salt
    1 c. masa flour (corn flour)
    parsley (optional)
Preparation
    Melt the lard, butter or drippings in a large pot over medium heat.
    Add the onions and cook until translucent.
