Italian Black-Eyed Peas With Pasta - cooking recipe

Ingredients
    3 cloves garlic, minced
    2 large onions, chopped
    2 medium carrots, sliced
    1/4 c. parsley, chopped
    2 Tbsp. basil
    1 tsp. oregano
    3 large tomatoes, chopped
    1/2 c. chicken broth
    1 Tbsp. salt
    1 tsp. pepper
    4 c. cooked black-eyed peas
    1/4 c. olive oil
    16 oz. elbow macaroni, cooked
    1/4 c. butter
    1/2 c. Parmesan cheese
Preparation
    In large skillet, saute first 6 ingredients in olive oil until tender.
    Add tomatoes, broth, salt and pepper.
    Cover, stirring frequently.
    Simmer 10 minutes.
    Add black-eyed peas.
    Cover and simmer gently for 20 minutes.
