Apple Juice Dressing - cooking recipe

Ingredients
    1/4 c. apple juice
    2 1/2 Tbsp. apple cider vinegar
    2 Tbsp. minced sweet onion or 1 large shallot, minced
    2 tsp. Dijon mustard
    1 tsp. dried tarragon
    3 Tbsp. coarsely chopped fresh parsley
    generous amount freshly cracked black pepper
Preparation
    Place all ingredients in a blender or the work bowl of a food processor fitted with a metal blade.
    Process on high until dressing is smooth.
    Cover and refrigerate several hours.
    Serve with fresh salad greens or fresh fruit.
    Makes 8 1/2 cups for 1-tablespoon servings.
