Beignets(Kind Of Like Elephant Ears) - cooking recipe
Ingredients

1/2 c. boiling water
1/4 c. sugar
2 Tbsp. vegetable shortening
1/2 tsp. salt
1 c. heavy cream
1/2 pkg. (1 1/2 tsp.) dry yeast
1/2 c. warm water
3 3/4 c. all-purpose flour
2 large eggs, beaten
vegetable oil (for frying)
powdered sugar (to dust)
Preparation

Pour boiling water over sugar, salt and shortening, then add the cream. Let mixture stand until warm (not hot). Separately sprinkle yeast over warm water in a bowl. Let stand until dissolved, then add shortening mixture. Mix well. Add 2 cups of flour and eggs; beat until well combined. Add just enough of remaining flour to make dough soft and not sticky. Put dough on lightly floured surface. Pat into rectangle, about 1-inch thick. Use rolling pin to roll 1/4-inch thick.
Cut into 2-inch squares. Heat oil to 360\u00b0 in large skillet or pot.
Fry to crispy brown on all sides. Drain on paper towels.
Dust with powdered sugar. Best right away.
