Chicken And Rice - cooking recipe

Ingredients
    2 Tbsp. margarine
    2 lb. chicken parts
    1 c. chicken broth
    1 c. sliced onion
    2 tsp. salt
    1 medium bay leaf
    1 1/4 c. rice, uncooked
    2 Tbsp. vegetable oil
    1 (1 lb. 3 oz.) can tomatoes, chopped
    1/4 c. chopped parsley
    1/4 tsp. pepper
    1 medium clove garlic, minced
    1 (10 oz.) pkg. frozen peas
Preparation
    Heat margarine and oil in a Dutch oven or large, heavy saucepan.
    Add chicken and brown well.
    Add tomatoes, chicken broth, onion, parsley, salt, pepper, bay leaf and garlic.
    Cover and cook over low heat 25 minutes.
    Add rice and cook 10 minutes, stirring occasionally.
    Add frozen peas and cook 10 minutes longer or until rice is tender and all the liquid is absorbed.
    Has 500 calories per serving.
