Carrot And Pecan Cake - cooking recipe
Ingredients

2 c. sugar
1 1/2 c. oil
4 eggs
2 c. flour
1/2 tsp. salt
2 tsp. cinnamon
2 tsp. soda
2 tsp. baking powder
3 c. shredded carrots
1/2 c. white raisins
1 c. chopped pecans
Frosting
Preparation

Beat sugar and oil in mixer bowl until smooth.
Add eggs 1 at a time, beating well after each addition.
Mix flour, salt, cinnamon, soda and baking powder in bowl.
Add to egg mixture; beat well.
Add carrots gradually, mixing well.
Stir in raisins and pecans.
Pour into 3 greased and floured 9-inch round cake pans.
Bake at 325\u00b0 for 25 minutes.
Remove to wire racks to cool. Spread frosting between layers and over top and side of cake. Garnish with additional pecans.
