Sugarless Fruitcake - cooking recipe
Ingredients

1 c. raisins
1 c. diced dried apricots
2 c. water
2 c. flour
1 tsp. soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
2 eggs, beaten or substitute
1 c. unsweetened applesauce
2 Tbsp. liquid sweetener
3/4 c. vegetable oil
1 tsp. vanilla
1/2 c. chopped nuts
Preparation

Combine raisins, fruit and water in saucepan.
Cook uncovered until water is evaporated and fruit is soft.
Set aside to cool. In a large bowl, combine flour, soda, salt and cinnamon.
In another bowl, combine eggs, applesauce, sweetener, oil, and vanilla.
Add nuts and reserved fruit.
Stir into dry ingredients and blend thoroughly.
Pour into a greased 10-inch fluted tube pan (9 cup size).
Bake at 350\u00b0 for 35 to 40 minutes or until cake tests done.
