Fat-Free Cornbread - cooking recipe

1 1/4 c. cornmeal
1/3 c. whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. grated carrots
1 Tbsp. apple juice concentrate
1 c. nonfat buttermilk
2 egg whites
Preparation

Preheat oven to 350\u00b0.
Use an 8-inch square nonstick pan, or a regular pan coated with a nonstick cooking spray.
In a medium bowl, combine cornmeal, flour, baking powder and baking soda.
In a small bowl, beat egg whites until foamy.
Add to flour mixture and blend thoroughly.
Pour into pan and bake for 20 to 25 minutes, or until springy to the touch.
