Sugarless Applesauce Cake(Diabetic Recipe) - cooking recipe

Ingredients
    1 c. raisins
    1 c. diced, dried fruit
    2 c. water
    2 c. all-purpose flour
    1 tsp. baking soda
    1/2 tsp. salt
    1/2 tsp. ground nutmeg
    1 1/2 tsp. ground cinnamon
    2 eggs, beaten
    1 c. unsweetened applesauce
    2 Tbsp. liquid sweetener
    3/4 c. vegetable oil
    1 tsp. vanilla extract
    1/2 c. chopped nuts
Preparation
    Combine raisins, fruit and water in a saucepan; cook, uncovered, until water is evaporated and fruit is soft.
    Set aside to cool.
    In a large bowl, mix flour, baking soda, salt, nutmeg and cinnamon.
    In another bowl, mix eggs, applesauce, sweetener, oil and vanilla.
    Add nuts and reserved fruit mix.
    Stir into dry mix.
    Pour into a greased 10-inch tube pan or 10-inch Bundt pan. Bake at 350\u00b0 for 35 to 40 minutes or until cake tests done.
