Old Fashioned Irish Stew - cooking recipe

Ingredients
    2 1/2 lb. shoulder of lamb
    2 large carrots
    6 small onions
    2 lb. potatoes
    1 tsp. salt
    1/4 tsp. pepper
Preparation
    Have the meat cut in pieces as desired for serving size.
    Cover with about 4 cups water (boiling); bring slowly back to boiling point.
    Add the seasonings.
    Add the carrots, cut in strips or thick slices; let simmer for 45 minutes.
    Add onions and potatoes; let simmer until potatoes and meat are both tender, about 1 hour. Garnish with chopped parsley when serving.
    To be served with a salad and a dessert of shamrock ice cream molds and little cookies.
