Microwave Lo-Cal Chicken Cacciatore - cooking recipe
Ingredients

2 medium chicken breasts, boned, skinned and cut in half lengthwise
3/4 c. sliced fresh mushrooms
1 (8 oz.) can tomatoes, cut up
1/2 c. chopped green peppers
1/4 c. chopped onion
3 Tbsp. dry red wine
1 clove garlic, minced
1/2 tsp. dried oregano
1/4 tsp. salt
dash of pepper
2 tsp. cornstarch
2 Tbsp. cold water
Preparation

Place chicken breasts in 10 x 6 x 1 1/2-inch baking dish. Combine mushrooms, tomatoes, green peppers, onion, wine, garlic, oregano, salt and pepper.
Pour over chicken.
Cook covered at Medium-high for 20 minutes, turning dish after 10 minutes.
Remove chicken to serving plate.
Cover to keep warm.
Combine cornstarch and water.
Add to liquid in baking dish.
Cook uncovered at High for 2 to 3 minutes, stirring.
Mix sauce and chicken and serve. Makes 4 servings.
