Carrot Loaf - cooking recipe

Ingredients
    1 1/2 c. flour
    1 tsp. cinnamon
    1/2 tsp. baking soda
    1/4 tsp. salt
    1/4 tsp. baking powder
    1/4 tsp. ground nutmeg
    1 c. shredded carrots
    1/2 c. sugar (granulated)
    1/2 c. brown sugar, packed
    1/2 c. cooking oil
    1 egg
    1/2 c. chopped nuts
    1/2 c. raisins (optional)
Preparation
    Stir together first 6 ingredients.
    In another bowl, stir together next 5 ingredients.
    Stir flour mixture into carrot mixture. Add nuts and raisins.
    Spoon into a greased 8 x 4 x 2-inch loaf pan.
    Bake 1 hour at 350\u00b0 or until a toothpick comes out clean. Cool 10 minutes.
    Remove.
    Cool on wire rack.
    Wrap and store overnight before serving.
    Makes 1 loaf.
