Turkey Smoked Sausage Rice Skillet - cooking recipe

Ingredients
    1 lb. turkey smoked sausage
    1/2 each: sliced carrots and mushrooms
    1 medium zucchini, sliced
    1 small can stewed tomatoes and juice
    1 Tbsp. reduced-fat margarine
    1 c. water
    1/4 tsp. basil and thyme
    4 oz. uncooked instant rice
Preparation
    Cut sausage into serving size pieces.
    Set aside.
    Saute mushrooms, carrots and zucchini in margarine in skillet over medium-high heat for 3 minutes.
    Add tomatoes with juice, water, basil, thyme and sausage.
    Reduce heat to low, cover and simmer 5 minutes.
    Mix rice into liquid, cover and remove from heat.
    Let stand 5 minutes, stirring after 4 minutes.
    Serves 4.
    One serving: 3 1/2 protein, 1 vegetable, 1 bread and 1/3 fat.
