Bountiful Bean Stew - cooking recipe

Ingredients
    1 lb. red kidney beans
    2 1/2 c. chopped onion
    6 carrots, cut in 1-inch pieces
    1 lb. Monterey Jack cheese, cubed
    12 oz. tomato paste
    1 1/2 tsp. garlic salt
    3 1/2 tsp. chili powder
    1 Tbsp. salt
    1/4 tsp. pepper
Preparation
    Rinse beans.
    Cover with water; boil 2 minutes.
    Let stand 1 hour, then simmer, covered, 50 minutes until beans are tender. Add all the rest of the ingredients except cheese.
    Simmer 30 minutes until carrots are done.
    Stir in cheese just before serving.
    Serves 8.
