Lemon Yam Puff - cooking recipe
Ingredients
- 
                            4 lb. hams
 
1 c. packed brown sugar
1/2 c. butter, softened
1/2 tsp. salt
2 tsp. grated orange
2 tsp. lemon rind, grated
Preparation
- 
                            Cook unpeeled whole yams in boiling water for 30 minutes or until tender; drain.
 
Peel and mash until
smooth.
If dry, add a little hot water.
Add remaining ingredients and beat until light and fluffy.
Transfer to a greased 2-quart casserole dish and bake for 30 minutes at 350\u00b0.
Serves 8 to 10.
