Kotlety Pozharskie(Ground Chicken Cutlets) - cooking recipe

Ingredients
    4 oz. white bread, trimmed of crusts (5 slices)
    1/4 c. milk
    2 whole chicken breasts (about 2 lb.), skinned and boned
    8 Tbsp. unsalted butter, softened (1/2 lb. stick)
    3/4 tsp. salt
    1/4 tsp. white pepper
    2 c. fresh bread crumbs
    10 Tbsp. unsalted butter, cut into small bits
Preparation
    In a small bowl, combine the 5 slices of bread and 1/4 cup of milk.
    Soak the bread for about 15 minutes, then squeeze the bread dry with your fingers.
