Tortoni - An Italian Delight - cooking recipe

Ingredients
    3 eggs
    3/4 c. sugar
    dash of salt
    1/4 c. whole blanched almonds
    almond extract
    1 1/2 c. heavy cream
    3/4 tsp. vanilla
    12 maraschino or candied cherries
Preparation
    Separate eggs.
    Turn each white into small bowl of electric mixer.
    Refrigerate yolks.
    Let whites warm to room temperature 1 hour.
    Mix 1/4 cup water with sugar in 1-quart saucepan, stirring over low heat to dissolve.
    Boil uncovered without stirring to 236\u00b0 on candy thermometer (syrup spins 2-inch thread when dropped from spoon).
