Red Beans And Rice - cooking recipe

Ingredients
    1 lb. small red beans
    1 large onion, chopped
    1 bell pepper, chopped
    1 lb. smoked sausage, sliced 1/2 inch thick
    1/2 lb. tasso or 1 ham hock trimmed
    2 bay leaves
    Tony Chacheres seasoning
    salt
    pepper
Preparation
    Cover beans with water and soak over night.
    Drain off water and add fresh water until it is about 2 inches above beans.
    Add tasso or ham hocks, onion and bell
    pepper and cook until beans are tender.
    Remove 1 cup beans and mash.
    Add mashed beans, bay leaves and sausage back to the pot and cook for 15 minutes.
    Add Tony's, salt and pepper to taste.
    Serve over rice.
