Apple Pecan Muffins - cooking recipe

Ingredients
    1 1/4 c. flour
    1 tsp. soda
    1 tsp. cinnamon
    1/8 tsp. salt
    1 c. sugar
    1/2 c. vegetable oil
    1 large egg
    2 Tbsp. lemon juice
    1 1/2 tsp. vanilla
    3/4 tsp. grated lemon peel
    2 c. peeled, grated apples
    1/2 c. chopped, toasted pecans
Preparation
    Preheat oven to 350\u00b0.
    Grease muffin pans.
    Sift together flour, soda, cinnamon and salt into a bowl.
    Combine sugar, oil, egg, lemon juice, vanilla and lemon peel in a large bowl.
    Whisk to blend.
    Mix in dry ingredients, apples and pecans.
    Spoon batter into muffin pans.
    Bake about 35 minutes.
    Test center with toothpick.
    If it comes out clean,
    muffin is done.
    Turn muffins out onto a rack.
    Cool slightly.
    Serve warm.
