Zucchini And Peppers - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1 large onion, chopped
    3 medium zucchini, 1/4 inch slices
    1 large roasted red sweet pepper (cut in thin strips)*
    2 Tbsp. water
    1/2 tsp. cumin
    1/8 tsp. salt and pepper (or to taste)
    2 Tbsp. Crumbled or chopped Mexican white cheese, such as queso fresco or farmer cheese
Preparation
    Heat oil in a large skillet over medium-high heat. Cook onion in hot oil for 5 to 8 minutes or until tender. Stir in zucchini, roasted pepper, water, and cumin. Reduce heat; simmer covered, for 3 to 5 minutes or until zucchini is crisp-tender. Add salt and pepper to taste. Transfer mixture to a serving bowl; top with cheese. Yield: 6 side-dish servings.
