Eggplant Balls - cooking recipe

Ingredients
    5 medium size eggplants
    5 eggs
    14 oz. grating cheese
    16 oz. bread crumbs (or more)
    dash of pepper
    1/2 tsp. salt
    2 tsp. parsley
    1/2 tsp. garlic powder
    6 Tbsp. tomato sauce
    4 peppers, sliced lengthwise
Preparation
    Peel and cut eggplant.\tPlace in boiling water and cook for 1/2
    hour or until soft.
    Drain in colander for 1/2 hour. Combine all
    ingredients
    except
    sauce and peppers.
    Mix and shape into balls.
    Place in heated frying pan with oil and fry until slightly
    brown.
    Place
    on
    flat
    baking
    sheet.
    Fry peppers and place on eggplant balls, scattering over top.
    Add sauce to top of peppers; cover and bake at 350\u00b0 for 30 minutes in preheated oven. Makes
    60
    balls.
    After
    frying
    place in sauce instead of meatballs.
