Roasted Vegetable Pasta - cooking recipe

Ingredients
    2 lbs. leeks, quartered
    1/4 c. olive oil
    1/4 c. defatted chicken broth
    2 tsp. thyme
    1 Tbsp. coarse salt
    black pepper to taste
    6 plum tomatoes, quartered
    2 yellow squash, sliced
    1/2 c. pitted black olives
    1/3 c. chopped flat-leaf parsley
    1 lb. Fettucini, cooked al dente
Preparation
    Preheat oven to 400 degrees.
    Place leeks in a shallow roasting pan and drizzle with olive oil and chicken broth. Sprinkle with thyme, salt and pepper.
    Cover with aluminum foil and bake for 30 minutes.
