Date Carrot Cake - cooking recipe

Ingredients
    1 (20 oz.) can Dole pineapple
    3/4 c. brown sugar, packed
    4 eggs
    1 (8 oz.) Dole chopped dates
    3 c. all-purpose flour
    1 tsp. ground cinnamon
    1/2 tsp. salt
    1 c. margarine, softened
    3/4 c. granulated sugar
    1 lb. Dole carrots, shredded
    2 tsp. vanilla extract
    2 tsp. baking soda
    1 tsp. ground ginger
    powdered sugar
Preparation
    Drain pineapple well.
    Beat margarine and sugars until light and fluffy.
    Beat in eggs.
    Beat in pineapple, carrots, dates and vanilla.
    Combine flour, soda, cinnamon, ginger and salt. Gradually beat in flour mixture until well blended.
    Pour batter into greased and floured 13 x 9-inch baking pan.
    Bake in 350\u00b0 oven 50 to 60 minutes until cake tester inserted in center comes out clean.
    Cool completely.
    Sprinkle with powdered sugar. Serves 20.
