Wild Blueberry Muffins - cooking recipe

Ingredients
    2 c. all-purpose flour
    3 tsp. baking powder
    1/2 c. sugar
    1/2 tsp. salt
    1 egg, beaten
    1 c. milk
    1/3 c. vegetable oil
    grated rind of 1/2 lemon
    1 c. blueberries
Preparation
    Preheat
    oven
    to 425\u00b0.
    Sift together the dry ingredients. Toss in blueberries.
    Stir in mixture of egg, milk, oil and rind. For perfect muffins, do not overmix.
    Batter should look lumpy. Fill greased muffin cups 2/3 full.\tSprinkle tops with
    a
    little powdered
    sugar.
    Bake 20 to 25 minutes until muffins
    are\tpuffed and golden.
    Run a knife around inside of each
    cup
    to
    loosen muffins
    and
    serve
    at once.
    Makes 12 muffins.
