Alabama Shrimp Creole - cooking recipe

Ingredients
    1 lb. fresh, raw, peeled and cleaned shrimp
    1 qt. fresh tomatoes, peeled and chopped or 2 (16 oz.) cans chopped tomatoes
    1 bell pepper, chopped
    1 large onion, chopped
    2 garlic cloves, chopped
    1 Tbsp. olive oil
    2 bay leaves (fresh if possible)
    1/2 c. fresh parsley
    creole seasoning to taste
    salt and pepper to taste
Preparation
    Cook all ingredients, except spices and shrimp, in oil for 5 minutes.
    Add 1 cup of water and cook down for 30 minutes.
    Add remaining ingredients, except shrimp; cover and simmer for 30 to 40 minutes.
    Add water, if needed.
    Add shrimp and cook 20 minutes longer.
    Serve over cooked long grain rice.
