Eggplant Parmesan - cooking recipe
Ingredients

1 or 2 medium size eggplants
1/2 c. oil (you may have to add more oil when frying)
Romano cheese
Mozzarella cheese
Preparation

Peel and slice eggplants; flour first, then dip into egg batter, then dip them in bread crumbs.
Heat oil; fry eggplants on both sides.
Remove from pan and place them on absorbent paper toweling.
(This is to remove the excess oil.)
