Fresh Veggie Cocktail - cooking recipe

Ingredients
    3 c. unsweetened pineapple juice, chilled
    1 medium carrot, sliced
    1 1/2 stalks celery, sliced
    1/3 large cucumber, peeled and sliced
    2 medium lemons, sliced
    fresh mint (optional)
Preparation
    Combine all ingredients except mint in a container of an electric blender.
    Process until smooth; chill.
    Serve with fresh mint, if desired.
