Pistachio Fruit Salad - cooking recipe

Ingredients
    1 large can unsweetened crushed pineapple
    1 pkg. sugar-free instant pistachio pudding mix
    1 large can unsweetened fruit cocktail, drained
    1 large can mandarin oranges (reduced sugar), drained
    1 c. reduced-fat whipped topping
Preparation
    Drain pineapple, reserving juice. In a bowl, whisk together the reserved juice and pudding mix for 2 minutes. This mixture will be thick. Stir in the pineapple, fruit cocktail and mandarin oranges. Gently fold in the whipped topping. Cover and refrigerate until serving.
