Turkey Wild Rice Soup - cooking recipe

Ingredients
    1 medium onion, chopped
    2 celery ribs, diced
    2 carrots, sliced
    1/2 c. butter or margarine
    1/2 c. all-purpose flour
    4 c. chicken or turkey broth
    2 c. cooked wild rice
    2 c. light cream or powdered milk
    2 c. diced, cooked turkey or chicken
    1 tsp. dried parsley flakes
    1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    In large kettle, saute onion, celery and carrots in butter until onion is transparent.
    Reduce heat.
    Blend in flour and cool until bubbly.
    Gradually add broth, stirring constantly.
    Bring to a boil; boil for 1 minute.
    Reduce heat; add wild rice, cream, turkey, parsley, salt and pepper.
    Simmer for 20 minutes.
    Yields 10 to 12 servings (about 3 quarts).
