Low-Fat Chicken Cacciatore - cooking recipe

Ingredients
    1 c. sliced mushrooms
    1 c. tomato sauce
    1 (No. 2) can tomatoes
    1/8 c. chicken broth, defatted
    1/4 tsp. basil
    1/4 tsp. oregano
    1 bay leaf
    1/2 tsp. salt
    2 tsp. minced garlic
    1 chopped onion
    4 half chicken breasts, skinned and boned
    1 Tbsp. liquid Butter Buds
Preparation
    Heat Butter Buds in a nonstick skillet and brown chicken, onion and garlic.
    Add all other ingredients except mushrooms. Bring to a boil.
    Cover and simmer about 30 minutes.
    Add mushrooms.
    Cook 10 more minutes.
    Remove chicken from pan and boil down sauce until slightly thickened.
    Serve over cooked pasta or rice.
    Serves 4.
