Lemon-Thyme Pesto - cooking recipe
Ingredients

2/3 c. stemmed fresh parsley
1/4 c. pine nuts
1 Tbsp. ground dried thyme
1 Tbsp. grated lemon peel
1 Tbsp. fresh lemon juice
1/4 c. or more olive oil
Preparation

Blend first 5 ingredients in food processor, gradually adding the olive oil.
Process until smooth.
If pesto is dry, add more oil by spoonfuls.
Season to taste with salt and pepper.
Terrific over shrimp, pasta or salad.
