Spinach Soup - cooking recipe

Ingredients
    1 onion, finely chopped
    2 Tbsp. butter
    3 Tbsp. all-purpose flour
    2 c. milk
    2 c. cooked spinach, well drained
    1 c. consomme
    salt and pepper to taste
    2 c. light cream
    1/2 c. sherry
    1 c. chopped toasted almonds
Preparation
    Saute onion in butter until tender; remove from skillet with slotted spoon.
    Stir in flour, then milk.
    Puree spinach with consomme; add mixture to sauce.
    Add seasonings.
    Stir in cream; mix well.
    Heat just until simmering; stir in sherry.
    Sprinkle with almonds before serving.
    Yields 8 to 10 servings.
