Southern Chicken Casserole - cooking recipe

Ingredients
    1 (2 1/2 to 3 1/2 lb.) frying chicken, cut up
    1/2 lb. bacon
    4 medium potatoes
    1 large onion, thinly sliced
    1 tsp. poultry seasoning
    1/2 tsp. salt
    1/2 tsp. black pepper
    1/2 c. chopped shallots, green onions or onions, sliced
    2 Tbsp. chopped fresh parsley
Preparation
    Wash and dry chicken.
    In Dutch oven, fry bacon until crisp. Remove bacon.
    Add chicken and brown well on all sides.
    Remove to a 2-quart casserole dish as pieces brown.
