Shrimp Potato Stew - cooking recipe

Ingredients
    1/4 c. cooking oil
    1 onion, chopped
    1 lb. small raw shrimp, peeled
    8 medium potatoes, peeled and cubed
    1 Tbsp. parsley, finely chopped
    6 c. boiling water
    salt and pepper to taste
    dash of Cajun seasoning
Preparation
    In a 4-quart saucepan, heat oil on medium setting.
    Add onions and cook until brown.
    Add shrimp and simmer for 10 minutes.
    Stir in cubed potatoes, parsley, boiling water and salt and pepper. Cook for 60 minutes.
    Serve over rice.
    For better taste, boil shrimp peelings in water for shrimp stock.
